Highwire's newest offering from Kenya comes from the Thiriku Farmers Cooperative Society, located Nyeri County, on the slopes of the Aberdare Mountain Range.
More than 1000 farmers in these fertile foothills contribute coffee to Thiriku. Producers typically cultivate around 250 coffee trees on half-acre plots at some of the highest coffee producing elevations in the country.
At Thiriku only the ripest cherries are delivered. Additional hand sorting and floating is done to remove less dense and damaged beans before the coffee is depulped, fermented and washed. After the coffee is washed, it’s soaked in fresh water for long periods of time to solidify the hallmark Kenyan profiles. The coffee is dried over a period of two weeks on raised beds, which are carefully constructed to ensure proper air circulation and temperature control for optimal drying.
Kenyan coffees are well known for their flavor, which comes from the unique combination of coffee varieties commonly grown in the area, volcanic soil, and signature processing methods. This coffee from Thriku delivers a punchy, citric acidity, which resolves into a sweet, slightly spicy finish.
